Baking Anyone?

I don't know what it is about Spring but it makes me feel like baking.  I know, it seems like I may have mixed up my holidays!  I just love pastel frosting, lemon flavored  batter and decorating with coconut, jelly beans and marshmallow peeps!  Above is a little taste of my baking "must haves".  Isn't that "homemade" stamp adorable?  Below is a recipe for one of our favorite Spring cakes!  Hope you enjoy! 

Pina Colada Easter Cake

1 box of white cake mix and ingredients
1 tub of Cool Whip
1 can of condensed milk
1 can of cream of coconut (such as Coco Lopez)
1 bag of sweetened coconut
(optional jelly beans and food coloring)

Mix white cake as per directions and then mix in 1/2 bag of coconut.  Bake according to directions.  When done with the end of a wooden spoon punch holes all over the cake.  In a bowl, mix the cream of coconut milk and condensed milk, pour the mixture over the hot cake and let stand until absorbed.  Mix the rest of the coconut with the cool whip and frost the cooled cake.  Decorate as desired!


PS:  Seems like whoopie pies, donuts and cake pops are all the rage in the baking world.  Have you seen the beautifully decorated cake pops at Starbucks lately?  My friend Julie has been making them at home and says they're pretty easy and a lot of fun, of course they don't look as adorable as the ones at Starbucks - go figure!
